Anything containing iron, tannin, or dye, and anything acidic. Red wine, coffee, blood, and pet accidents all reach the wood fast if the finish is thin, and once they are in the timber no cleaning company touches them. That is the category where the ten minutes genuinely matters. Cooking oil, milk, and plain water are much more forgiving and can wait until you have found a towel.
When to Stop and Call Somebody
If liquid has gone into a seam and you cannot get it out, if a board edge starts to rise, or if a mark is still darkening an hour later. Those are moisture in the wood, and the useful action is airflow and a fan on it, not more cleaning. We can tell you afterward what is recoverable.
