Cupping is a moisture gradient through the thickness of a board. Fix the source, let the room dry, and a mildly cupped floor will often flatten most of the way back over several months on its own. A floor that has been wet for a year or more usually does not, because the compressed fibers at the board edges have taken a permanent set. Either way it is not something a cleaning addresses, and anybody who tells you otherwise is not being straight with you. Where water has sat against oak for a long time it reacts with the tannins in the wood and leaves dark gray or black marks in the grain, sometimes in a distinct outline of where the wet area was. It is the same reaction that leaves rings around old nail heads, and the only genuine remedy is sanding and treating the wood itself, which belongs to a flooring contractor.
